Maple Roasted Chickpeas

Surprisingly sweet nibbles that pack a nutritious punch


Chickpea snacks might sound strange - but not in the many countries where roasted chickpeas are the equivalent of Goldfish.

Cook from scratch or buy them canned; then rinse, drain and blot dry with paper towel. Sweeten them by roasting with vegetable oil and maple syrup. You can even toss them with cinnamon or ginger for extra spice. The trick: spread a 15-ounce can of chickpeas in a single layer on the bottom of a large roasting pan, then drizzle the whole thing with a ½ tablespoon oil and 2 tablespoons of syrup. Bake for about 30 minutes in a hot oven.

To make these munchies crunchy for older kids, roast at 400°F for 35-45 minutes.

For the under 12-month set, keep them on the softer side by roasting for only20-25 minutes in a 400°F oven.
